Drying of crops or other various products including fruits, chilies etc.; using solar radiation is of great importance. Drying enhances the storage of different products over longer periods. Depending upon a country environment, many food items are devoured by fungus or microbiological organism. The drying through proper process could prevent these types of wastages. One of the energy consuming processes in food preservation is drying. This research presents the design, construction and the performance appraisal of a mixed mode solar dryer with solar tracking system for the preservation of food. In this dryer; hot air is passed through air pipes to the cabinets and at same time the drying chambers absorb the solar energy which is provided by using the solar panel which include the technology of solar tracking system, and during night time heat is also provide by using bulb inside drying chambers. Solar dryer works on the principle of greenhouse effect as solar radiation is trapped inside the chamber, so the results obtained during the test time showed that the temperature inside the dryer was higher than ambient temperature during day light when sunlight is sufficient. The dryer shows sufficient ability to dry items to a safe moisture level and ensures a fine quality of dried product. Solar drying system can be operated at high temperatures.
